Turkish Apricot Dessert
When we were living in Port Elizabeth, we had a friend called Laetitia. She is a well-travelled lady and is well-known for organising tours to Istanbul and Egypt. When Laetitia asked us to come for dinner, it was a moment to look forward to because of all the interesting stories she would share with us and her cooking was always exotic. I remembered Leatitia today because I have decided to make her delicious Turkish apricot dessert.
Ingredients
Turkish (dried) apricots (enough for two people)
Sugar
Water
Star anise
Vanilla powder
A touch of ground cumin
Double thick Greek yoghurt
Honey
Method
Cover the apricots with water, add sugar to your taste; add the spices and cook uncovered until soft and the water and sugar mixture has become a syrup. Spoon the apricots and a bit of the syrup into individual bowls. Serve with yoghurt and drizzle with honey.
I put in the double thick yoghurt first, then about four apricots per person and spoon the apricot syrup over.

And I forgot: In Turkey they sprinkle finely chopped pistachio nuts over- the green contrasts nicely with the white and bright orange. But it’s so adaptable- suit yourself.
