Quick And Easy Minestrone Soup
This soup is made in just 30 minutes. It is a hearty, real Italian minestrone soup. When the mountains in our surroundings are topped with a blanket of snow, this soup is a winner. I made it yesterday, so guess what? It is shivering cold and winter’s first snow is covering the mountains. Our kitty has decided that he would spend his winter on his little heated mat, especially made for animals. Enjoy the soup.
Ingredients
1 kg Nature’s Garden Country Mix (or 1 kg frozen mixed vegetables of your choice)
1 tin (410 g) All Gold Indian Style Diced Tomatoes
1 tin (410 g) baked beans in tomato sauce
2 onions, chopped
Chopped garlic (how much is up to you)
½ Packet of diced bacon (optional)
A cube of chicken stock
Salt to taste
Black pepper
10 ml Italian herbs
A handful of spaghetti
Method
Fry the onions and chopped garlic in a bit of extra virgin olive oil until soft. Add and fry the bacon. When this is done, add the vegetables; tin of tomatoes, tin of baked beans and chicken stock. Add 1,5 liters of water and bring to the boil. After 15 minutes, add the spaghetti. Cook for another 15 minutes and season with salt and black pepper. (If you like your soup a bit thicker, add a packet of minestrone flavoured instant soup.) If you use the packet of soup, be careful not to add too much salt. Serve with some grated Parmesan cheese.
