Poppy Seed Citrus Cake
One of my favourite cakes is Poppy Seed Citrus Cake. It is a cake with an intense citrus flavour, beautiful when you present it with crème fraiche and always a party favourite.
Ingredients
125 g Stork margarine
zest of a one lemon
250 g castor sugar
2 extra-large eggs
125 ml milk
1 t vanilla essence
125 ml poppy seeds
375 ml self-raising flour
Citrus syrup
250 ml castor sugar
250 ml water
zest of 2 oranges; 2 lemons; 2 grapefruit and 2 limes
1 star anise
Method
Butter and flour a round cake tin. Preheat the oven to 180 degrees C. Cream the butter and sugar, add the eggs one at a time and beat well. Stir in the flour, milk, vanilla essence, zest and poppy seeds. Mix well. Spoon the dough into the cake tin and bake for about 35 minutes.
Make the syrup while the cake is baking. Combine the lemon juice, sugar; star anise and water in a pot. Bring to a gentle boil and allow the sugar to melt before adding the zest. Keep reducing the liquid until it is syrupy and the zests are almost see-through. Place the cake on a serving platter and spoon the hot syrup over it. Decorate the cake with the zest. Serve with crème- fraiche.
