Dessert in a hurry
There are times when you have to entertain without having time to prepare elaborate dishes beforehand. So, these are a few ideas for pudding which you can make in the nick of time:
Romany Cream Delight (Serves one person):
Put a Romany Cream cookie (or any other) in a pretty bowl – I like to use small espresso cups. Splash some liqueur over the cookie and heat in the microwave for about 20 seconds on high. Add a spoonful of ice-cream, trim with a cherry and serve.
Custard Creams (Serves one person):
Mix equal amounts (about 75g each) of Mascarpone cheese and Ayrshire Lemon Curd yoghurt (obtainable from Woolworths) and spoon into a glass. Put some lemon zest over the mixture. Fill the glass up with cold custard. Spread a teaspoon full of brown sugar over the custard, trim with fresh mint and leave in the fridge for about 30 minutes. The sugar will melt and ooze into the custard.
Turkish Apricots (Serves two):
Put sun dried Turkish apricots (enough for two persons) in a saucepan, cover with water and add sugar to sweeten. Add a touch of cinnamon. Cook gently until syrupy. Spoon the apricots and syrup into pretty bowls and top with thick, Greek yogurt.
