Deon’s mother invited us to have our Christmas dinner at her home and I was responsible for the desert. I decided on something light and easy, something I could assemble at her home, after the dinner. So, I decided on my own version of the popular Eton Mess.
1 cup blueberries and a handful of fresh cherries
3 cups hulled strawberries macerated for a few hours in 10ml sugar and some cherry liqueur
10 ml caster sugar
2 cups whipping cream
1 packet meringue nests
Cut all but ten strawberries in half. Add the caster sugar to the cream and then whip the cream until thick, but still soft. Crumble in the meringue nests, but reserve 6. Fold the fruit (also reserve some blue berries) into the cream mixture. Arrange on four beautiful plates, top with the remaining whole strawberries, fresh cherries and blueberries and lastly crumble over the last meringue nests.
