I developed the following salad and it has become one of our favourite summer salads. It is easy and quick to make, as well as healthy.
Tuna and potato salad
Ingredients (serves 2 people)
1 tin of tuna (chunks)
Crisp salad leaves and 1 spring onion
A handful of caper berries
Three or four anchovies
Good quality mayonnaise
4 Mediterranean style potatoes
Pour 175 ml olive oil into a bowl. Add a spring onion (chopped); garlic; a few chopped basil leaves; rind of one lemon; salt and a handful of mint leaves to the oil. As soon as you have cooked the potatoes, cut them in halves and dip them into the oil. It will suck up the oil.
To assemble your salad
Arrange the salad leaves on a pretty salad plate. Add the potatoes, small heaps of tuna, the caper berries and the anchovies. Dress the salad with mayonnaise. Enjoy with crusty bread.
