Tiramisu Cake
If you are a fan of tiramisu, Italian for cheer me up, this decadent cake is for you. With ingredients like chocolate, Amaretto liqueur, cocoa, mascarpone cheese and espresso, it will certainly cheer you up.
It was Friday again, but as we had an exhausting week, we decided to have an at home day. I have always wanted to make a tiramisu cake, and this was the perfect day for doing it. So off to the shop I was to buy the delicious ingredients.
You need the following ingredients for the cake:
Syrup
200 ml strong hot coffee
two sponge cakes, each cut in two horizontally (Yes, I bought the sponge!)
2 tablespoons castor sugar
2 tablespoons Amaretto liqueur
Frosting
2 tablespoons Amaretto liqueur
1 tablespoon vanilla extract
1 cup whipping cream
3 tubs of mascarpone cheese
250 ml castor sugar
Garnish
cocoa, for dusting the cake
chocolate balls (Whispers)
dark chocolate of your choice
Instructions
Mix the ingredients for the syrup and set aside to cool. Beat the mascarpone cheese, castor sugar, Amaretto and vanilla in a mixer until smooth. Beat the cream in another bowl until stiff peaks form. Fold the cream into the mascarpone mixture.
Place one layer of cake on a plate, moisten with the syrup and cover with a thick layer of the mascarpone mixture. Repeat for remaining three layers. Now coat the sides of the cake with the mixture. It does not have to be perfectly smooth. Dust some cocoa powder over the top layer. Chop the chocolate and spread it on the top layer, add the chocolate balls and some gold dust, if you have any left from Christmas. Use your imagination to decorate the cake. Cover the sides of the cake with some chopped chocolate. Refrigerate overnight and enjoy.
It is quick and easy to make, but we warned – this is a seriously rich cake. Serve it to special friends with good coffee and be happy!
