Ingredients (serves about 6 people)
2 red peppers and 2 yellow peppers, chopped
1 red onion, sliced
1 butternut, chopped into small chunks
2 leeks, chopped
6 courgettes, chopped
6 yellow pattipans
10 baby carrots, chopped
6 baby potatoes, halved
2 cloves garlic, chopped
freshly ground black pepper
4 sprigs fresh rosemary
4 sprigs fresh thyme
Put the prepared veggies in a large oven roasting tray. Scatter over the roughly chopped rosemary and thyme leaves, as well as the salt and pepper. Drizzle it all with olive oil and toss to coat. Roast the veggies in an oven that has been heated to 180 degrees C for about 50 minutes, or until golden and soft. Serve with roasted chicken or meat.
