We are into healthy eating this year, so I made delicious Panzanella or bread salad for lunch. It is a Tuscan salad of bread and tomatoes, lots of olive oil and basil and it is a very popular dish in Italy. It is easy to prepare with ingredients already in your kitchen.

fresh, red tomatoes; cucumber; red onion; basil; salt; ground black pepper; olive oil; crusty bread
Cut 4 tomatoes into chunks. It must be fresh tomatoes which have not seen the inside of a fridge. Cut 4 slices of day old crusty bread (ciabatta or baguette) into chunks. Add some cucumber, cut into chunks; add 1/2 red onion, sliced; a bunch of fresh basil, torn into pieces and salt and pepper to taste. Mix all the ingredients together and add 125 ml (or more if you prefer to) good olive oil. Mix well. Let it marinate, covered and at room temperature for an hour or two. Do not refrigerate. Serve at room temperature.
