Old Fashioned Flan Recipe
When I listen to Deon’s stories about the food his mother prepared when he was growing up, it is always interesting that it seems to be the same type of food I grew up with. Even the recipes our moms used seem to be similar – maybe they both used the famous Kook en Geniet recipe book.
Today Deon spoilt me with a wonderful new recipe book – The French Affair: Tables of Love – written by chef Jan Hendrik van der Westhuizen, a Capetonian who now lives in the South of France. He is the owner of a restaurant in the South of France, called Jan. It is a beautiful book with beautiful pictures, wonderful recipes and stories about the food his grandmothers and mother made. He adapted these recipes and gave it a French twist. Even the names of the recipes in the book are an excuse to buy the book: Floating Islands with Caramel Sauce; Sticky Tarte Tatin; Turkish Delight Pavlova; Carrot Cake with Classic Cream Cheese Frosting … do I need to say more?
On Fridays, when we were kids, my mom always baked a cake or a flan to serve with tea or coffee for visitors during the weekend. When she recently visited us, we spoke about the things we loved as kids and we she just had to bake a flan. It was difficult to find a flan baking pan, because not many shops sell these pans today. Luckily there are many interesting shops in our area and we managed to find a shop which sells these strange looking pans.
Deon’s mom also had a turn to make comfort food of the past. She had to demonstrate how to bake her famous milk tart. At last this family secret has been revealed. Deon has recently reminded me of a corned beef stew his mom made when he was a child (and yes, my mom made the same stew). Served with mash, this was comfort food at its best when we were children.
Today we prefer a different diet, but we will always think back fondly of the food we grew up with. It would be interesting to read about your favourite food from home. Tell us what you liked best, treat your family and remember to take a photograph or two.
This is my mother’s recipe for a flan. The baking pan looks rather a lot like a flying saucer to me. The secret is to pour enough dough into the pan, or else you have a bottom and a top part that do not connect.
Basic Flan Recipe
65 g Margarine
2 eggs
200ml sugar
375 ml flour
10 ml baking powder
175 ml milk
A pinch of salt
Method
1. Heat the margarine and milk until the margarine has melted.
2. Beat the eggs and sugar until the mixture is light in texture.
3. Sift the dry ingredients together and fold into the egg mixture, alternatively with the milk.
4. Pour the dough mixture into a buttered flan baking pan. Bake for 15 – 20 minutes at 180 degrees C.
5. Leave in pan to cool and then remove it from the pan.
(This is enough dough for 1 flan.)
Ginger filling
250 ml water
250 ml golden syrup
50 ml custard powder
2 ml ginger
125 ml fresh cream
Method
1. Heat 200 ml water and syrup in a saucepan until it reaches the boiling stage.
2. Dissolve the custard powder in the remaining 50 ml water.
3. Pour the hot syrup onto the custard mix, add the ginger powder and pour everything back into the saucepan.
4. Cook about 3 minutes until it thickens. Let it cool and pour the mixture into the baked flan.
5. Decorate with whipped cream.
Pineapple filling
15 ml margarine
200 ml sugar
1 egg, separated
25 ml Maizina powder
250 ml crushed pineapple
2 ml salt
2 ml vanilla essence
125 ml fresh cream
1. Heat the margarine, sugar, egg yolk, Maizina powder and pineapple until it thickens.
2. Add the salt; vanilla and whipped egg white.
3. Set aside to cool.
4. Pour mixture into the baked flan.
5. Decorate with whipped cream.
