In search of the perfect burger?
In search of the perfect burger? Well, what about a burger on a stick? I made my own patties and used mini hamburger buns.The recipe is as follows:
500g beef mince
2 spring onions, chopped
2 eggs, slightly beaten
2 slices of bread, crumbed
1 garlic clove, chopped
½ cup of chopped coriander leaves
a pinch of salt
ground black pepper
50ml tomato sauce
Mix all the ingredients together. Roll into 8 small patties. Refrigerate for ½ hour for the flavours to develop. Fry 250g diced bacon for about 10 minutes, add 1 sliced onion and cook until translucent, add 25ml of balsamic vinegar, 1 chopped garlic clove, black pepper, and 15ml of brown sugar and cook until sticky.
Braai the patties on the coals (ask the Master of the House to do this).
While Master is taking care of the patties:
• toast the buns slightly in the griddle pan
• fry brown mushrooms and red peppers, cut into rings, in a griddle pan.
Assemble the burger on a kebab-stick. Spoon some of the bacon mixture onto the plate.
You could also add:
• some ready- made mushroom sauce
• a round of Fairview traditional chevin
• fresh figs, cut open and slightly toasted
