The Master of the House would choose a salad if he has to choose a last meal before his last minutes on earth. It suits me, because I do not have to slave away in the kitchen during the holidays. A meal is always quick and easy in our home. The following salad is fresh and healthy. Serve it with dry white wine and crusty bread, and you have the perfect meal.
Ingredients (serves 2 people)
4 cooked baby potatoes
3 soft boiled eggs
a handful of thin green beans, cooked and tossed in a bit of butter
one smoked chicken fillet, cut into thin slivers
sea salt and ground black pepper
Basil pesto pasta sauce (available at my good friend, Woolworths)
Arrange the salad leaves; beans; eggs; potatoes, avocado and chicken on a salad plate. Drizzle with olive oil. Serve with salt, pepper, hummus and pesto sauce on the side.
